I went to sign up for my GMAT today and saw an option for a coupon or Voucher code. Does Veritas offer these codes to their students?

I wish we could! Typically those vouchers are issued by schools that want to attract certain candidates and make it easy for them to gather their application requirements. They're also used if GMAC needs to provide you with a make-up testing appointment because of adverse testing conditions (fire alarms, computer failures, etc.) during a previous exam for you. Let's hope you don't need to take advantage of one of those!
