I joined the GMAT prerp course yesterday and won't receive my text books till Tuesday. Are there any workbooks available online which I can start practising with until the Veritas books arrive ?

Have you checked out Veritas Prep on Demand? This is our self-study utility that has all of the same lessons as the book. Unfortunately, we do not have digital workbooks. You will be fine to attend class without the books for the first couple of sessions. If you need any further assistance, feel free to email me directly.
